are there other tails in the line up that will give more pitch & roll stability but not lose too much speed...?
Mostly use the setup for winging in small chop & a bit of down winding.Apex tail maybe?

There are a few option to give you more stability but you will sacrifice a small amount of speed as the sprint tail is quite fast . The 14" twin tip would help , the new Mach 2 is a fast tail with winglets for a more locked in feel than a flat tail but is still quite pitch sensitive .I've got a few tails your welcome to try if your ever around the Sunshine Coast .

I have a demo Game Changer 140 (900cm2) your welcome to try . It is the smallest of the new mid aspect range Signature has released.
It pumps better than the Stealth (Vortex) 175 and is way faster aswell. A great high performance wing in the surf for lighter riders .
The complete range now has a split fuselage with different lengths .

I'm talking about the Hyper (Hight aspect wing) 150.
I heard Unfifoil works with a new factory, stiffer carbone mast and overall better construction for their foil.
Was surfing with Adam Bennett's on Saturday, he was riding the new 150 proto mid aspect . Crazy glide and super quick , his first wave went for about 3mins . Much more forgiving foil & easier to ride , coming out in a 170 as well . Not far off production.
But will I need a new mast for those foils? That's the question. Did all brands just decide that everyone needs to buy full new setups and there is no more easy path to upgrade?
No the mast will still fit , the new wing is on the split fuse so you'll just need to buy the back part of the fuse , that way you can run both old and new sdet ups on original mast.

I'm pretty sure Sig & Uni are both made in the same new factory & should fit with a few adjustments.

Uni & Sig are 100% NOT made in the same factory it's been like that for some time. There are a lot of differences now , most notable is the Fuselage, the Uni is much more slim and rounded where as the Signature is more bulky and more squared .

I was impressed how loose the foil is. It's clearly for pros. Very nice full carbon kit.
However speed and glide is nowhere like the axis black series 980. The hyper series front wings are actually quite thick. Thicker than moses w1000 or axis 980.
I'm 76kg and could probably go down in sizes.
Does anyone know whether the smaller sizes such as 170 or 190 are any thinner? Then there's also the race tail.

You can't compare Unifoil 210 to Axis 980, not the same surface area. You need to compare the Axis 980 to the Unifoil 190. And you are right about the tail, the flat tail is way faster than the carve tail.
Unifoil 170 and 190 are thinner than 210 and more hight aspect.

Even the 190 isn't that thin. So I am suspicious on its top speeds, need to see some data.
